The same tree - the tea tree or Camellia sinensis - is responsible for all the different colours of tea. The various transformation stages to which the leaf is subjected after picking determines the colour of each tea. White teas transform the fewest number of tea leaves, which are simply withered and dried. Very rare, in bygone days, white teas were reserved for the Chinese Emperors. Their very fine, subtle taste is now highly sought after and appreciated by tea lovers.
